There are some recipes that I make so often that I don’t even need to look at the recipe anymore, and this Garlic Miso Salmon is one of them.
Whenever I need a crowd-pleasing dish for a potluck, family gathering, or holiday meal, this salmon always makes its way onto the menu. The combination of savory miso, fragrant garlic, and tender baked salmon creates a dish that both kids and adults enjoy.
Last Holiday season, I made a large batch for a party of 20 people, and it disappeared surprisingly quickly. After several guests asked how I made it, I knew it was time to finally share the recipe here.
This Japanese-inspired salmon recipe is incredibly easy to prepare. The miso marinade adds rich umami flavor while helping the salmon stay moist and tender during baking. What Is Miso?

Tips for Success
Don't Skip the Marinating Time - Even 30 minutes helps the salmon absorb the savory miso and garlic flavors.
Remove Excess Marinade - Because miso contains natural sugars, leaving too much marinade on the fish can cause it to burn before the salmon finishes cooking.
Use Center-Cut Salmon - Thicker salmon fillets cook more evenly and stay juicy during baking.
RECIPE
Servings: 2-3
Time: 60 minutes
Ingredients:
2 pcs salmon fillet
2 garlic cloves
2 tbsp miso
1 tbsp soy sauce
1 tbsp sake
1 tbsp mirin
1/2 tbsp sesame oil
Instructions:
Prepare the Marinade
In a bowl, combine the miso, soy sauce, sake, mirin, sesame oil, and grated garlic.
Mix until smooth and well combined.
Marinate the Salmon
Gently coat each salmon fillet with the miso mixture.
Place the salmon in a bowl or resealable bag and refrigerate for at least 30 minutes.
Preheat the Oven
Preheat your oven to 400°F (200°C).
Bake
Take the salmon out of the marinade and lightly scrape off any excess coating.
Place the salmon fillets on a lined baking tray, leaving a little space between each piece for even cooking.
Bake for 18–20 minutes, or until the salmon flakes easily with a fork and the edges are lightly golden brown.
Serve immediately with steamed rice and your favorite vegetables.

Yes. Marinating overnight creates even deeper flavor. Just be careful not to exceed 24 hours, as the fish may become too salty.

Any type of miso works well for this recipe, I used red miso homemade by my friend.

Yes. Thaw the salmon completely and pat it dry before marinating.
Can I grill this salmon instead?
Absolutely. Grill over medium heat until cooked through, watching carefully because the miso glaze can caramelize quickly.
