Shredded Cabbage with Wafu Sesame Dressing

  • 1/2 head of green cabbage (or about 4 cups), finely shredded

Instructions:

  1. Make the Dressing

    Using a mortar and pestle (suribachi if you have one), grind the sesame seeds until they release their aroma and natural oils.

    Add rice vinegar, soy sauce, sugar, and sesame oil.

    Mix until smooth and well combined.

  2. Prepare the Cabbage

    Remove the core of the cabbage and slice into very thin shreds.

    For extra crispness, soak the cabbage in ice water for 5 minutes, then drain well.

  3. Assemble

    Place shredded cabbage in a large bowl or on a serving plate.

    Drizzle the sesame dressing over the top, toss lightly, and serve immediately.
