Shredded Cabbage and Sesame Dressing
Shredded Cabbage with Wafu Sesame Dressing
If you’ve ever eaten at a Japanese restaurant, you’ve probably seen a simple side of finely shredded cabbage served with tonkatsu (fried pork cutlet) or other main dishes. It may look plain at first, but once it’s paired with a nutty sesame dressing, it transforms into something refreshing, crunchy, and addictive.
This dish is one of those everyday recipes that I make for my family because it’s quick, budget-friendly, and healthy. The sesame dressing is creamy, fragrant, and slightly sweet—perfect for cutting through rich meals or enjoying as a light salad.

Instructions:
Make the Dressing
Using a mortar and pestle (suribachi if you have one), grind the sesame seeds until they release their aroma and natural oils.
Add rice vinegar, soy sauce, sugar, and sesame oil.
Mix until smooth and well combined.
Prepare the Cabbage
Remove the core of the cabbage and slice into very thin shreds.
For extra crispness, soak the cabbage in ice water for 5 minutes, then drain well.
