  1. Prep the Lotus Root

    Peel the renkon (lotus root) and slice it into thin rounds (about 1/8 inch thick).

    If the slices are large, cut them in half to make half-moon shapes.

    Soak the sliced lotus root in a bowl of water with a splash of vinegar for 5–10 minutes to prevent discoloration and remove excess starch.

  2. Stir-Fry the Lotus Root

    Heat a pan over medium heat and add about 1 tbsp of sesame oil.

    Drain the lotus root slices and pat dry with a clean towel.

    Add them to the pan and stir-fry for 2–3 minutes, until they start to turn translucent and lightly golden on the edges.

    Chop red chili pepper and add to the renkon.

  3. Add the Sauce

    In a small bowl, mix together the sugar, soy sauce, and mirin.

    Pour the sauce over the lotus root and continue cooking for another 1–2 minutes.

    Stir occasionally, until the liquid is mostly absorbed and the lotus root is well coated.

  4. Garnish and Serve

    Turn off the heat and sprinkle with toasted sesame seeds.

    Serve warm or at room temperature.
