RECIPE

Servings: 1 medium ramekin or small gratin pan

Time: 20 min

Ingredients:

  • 1 cup cooked rice

  • 2/3 cup Japanese curry (recipe here)

  • 1 pc egg

  • mozzarella cheese

Instructions:

  1. Preheat oven to 425°F (220°C). Lightly grease a medium ramekin or small gratin dish.

  2. Layer the rice at the bottom of the dish, pressing it in evenly.

  3. Pour the curry on top of the rice, spreading it evenly to cover.

  4. Crack an egg into the center of the curry.

  5. Top with cheese, generously covering the surface.

  6. Bake for 12–15 minutes, or until the cheese is melted and golden, and the egg is cooked to your liking.

    You can bake a little longer if you prefer a fully set egg.

  7. Serve hot. Sprinkle chopped parsley Mix the soft egg and melty cheese into the curry rice and enjoy every bite!
