Ingredients:
For the Pasta
1 serving pasta
1/2 pack shimeji mushrooms
2 tbsp shiso butter
1/4 cup pasta water
1/2 tbsp soy sauce
cooking oil
For the Shiso Butter
4 tbsp unsalted butter, softened
1/2 tsp salt
10–12 shiso leaves, finely chopped
2 cloves garlic, grated
Instructions:
Make the Shiso Butter
Soften the butter in a bowl.
Mix in the salt, chopped shiso leaves, and grated garlic until evenly combined.
Shape the butter into a log using plastic wrap or parchment paper.
Refrigerate until firm.
Cook the Pasta
Cook the pasta according to the package instructions.
Reserve 1/4 cup of pasta water before draining.
Cook the Mushrooms
Heat a pan with a splash of cooking oil over medium heat.
Separate the shimeji mushrooms and sauté for about 1 minute until slightly softened.
Combine Everything
Add the shiso butter to the pan.
Once melted, add the cooked pasta and reserved pasta water.
Toss everything together until the pasta is evenly coated.
Add the soy sauce and mix well.
Serve immediately while hot.
