Despite the name, it’s actually considered Chinese influenced Japanese cuisine rather than authentic Chinese food. You’ll often find it at casual Chinese restaurants (we call it “Machi-chuka”) across Japan.

Ingredients:

For the Rice & Omelet

  • 1 cup cooked rice

  • 2 eggs

  • 2 imitation crab sticks (kanikama), shredded

  • chopped green onion

  • sesame oil

For the Sauce

  • 1 ½ cups water

  • 1/2 tbsp torigara (Japanese chicken soup base)

  • 1 tbsp sake

  • 1/2 tsp grated ginger

  • 1 tbsp potato starch

  • 1 tbsp sesame oil

  • salt to taste

Instructions:

  1. Make the Savory Sauce

    In a small saucepan, combine the water, torigara, sake, grated ginger, potato starch, and a pinch of salt.

    Heat gently while stirring continuously until the sauce thickens slightly and becomes glossy.

    Finish by stirring in the sesame oil.

    Taste and adjust seasoning if needed.

  2. Make the Crab Omelet

    Beat the eggs in a bowl and mix in the shredded imitation crab.

    Heat a lightly oiled frying pan over medium heat and cook the eggs into a soft, fluffy omelet.

    Try not to overcook it - the center should stay slightly soft for the best texture.

  3. Assemble the Bowl

    Put the cooked rice in a bowl.

    Place the omelet on top, then pour the sauce over everything.

    Finish with chopped green onions and serve immediately.
