This Wafu Hamburg (和風ハンバーグ) — sometimes written as Wafu Hambagu to reflect the Japanese pronunciation — is a juicy Japanese hamburger steak served with a light ponzu-based sauce, grated daikon, and fresh shiso.

Unlike Western hamburgers, Japanese hambagu (ハンバーグ) is served without a bun and enjoyed with rice as part of a comforting home-style meal. The patties are tender and flavorful, and the ponzu butter sauce adds a bright citrusy flavor that balances the richness of the meat.

RECIPE

Servings: 8-10 patties

Time: 20 min

Ingredients:

Hamburger Patties:

  • 1 lb ground beef

  • 1/2 lb ground pork

  • 1 small onion, finely chopped

  • 2 tbsp butter

  • 2 eggs

  • 1/3 cup panko breadcrumbs

  • 1/4 cup milk

  • salt and pepper, to taste

Ponzu Butter Sauce:

Toppings:

  • fresh shiso leaves

  • daikon oroshi (grated daikon radish)

Instructions:

  1. Sauté the Onion

    Cook chopped onions in a pan with butter until soft and translucent.

    Let them cool before mixing with the meat.

    *This step adds sweetness and keeps the patties juicy.

  2. Mix the Hamburger Patties

    In a bowl combine: ground meat, sautéed onions, panko. milk, egg, salt and pepper.

    Mix gently until just combined.

    Form oval patties and lightly press the center.

  3. Cook the Patties

    Heat oil in a skillet.

    Cook patties 3 minutes, until browned

    Cook the other side for another 3 minutes with a cover, cook until done.

  4. Make the Wafu Sauce

    In the same pan add: sugar, sake, mirin, soy sauce, ponzu

    Simmer briefly, then add butter.

    Return patties to the pan and spoon the sauce over them.

    Cook for 1-2 minutes until glossy.
