Ingredients:
Hamburger Patties:
1 lb ground beef
1/2 lb ground pork
1 small onion, finely chopped
2 tbsp butter
2 eggs
1/3 cup panko breadcrumbs
1/4 cup milk
salt and pepper, to taste
Ponzu Butter Sauce:
Toppings:
fresh shiso leaves
daikon oroshi (grated daikon radish)
Instructions:
Sauté the Onion
Cook chopped onions in a pan with butter until soft and translucent.
Let them cool before mixing with the meat.
*This step adds sweetness and keeps the patties juicy.
Mix the Hamburger Patties
In a bowl combine: ground meat, sautéed onions, panko. milk, egg, salt and pepper.
Mix gently until just combined.
Form oval patties and lightly press the center.
Cook the Patties
Heat oil in a skillet.
Cook patties 3 minutes, until browned
Cook the other side for another 3 minutes with a cover, cook until done.
Make the Wafu Sauce
In the same pan add: sugar, sake, mirin, soy sauce, ponzu
Simmer briefly, then add butter.
Return patties to the pan and spoon the sauce over them.
Cook for 1-2 minutes until glossy.
